Chocolate Dipped Orange Madeleines

Today we’ll be making some chocolate dipped Orange Madeleines! So excited to share this recipe! These Madeleines are incredibly tasty and the best thing you can make!

WHAT ARE MADELEINES?

Are they cookies or cakes? Well, madeleines are not cookies. They are very small french butter cakes with a distinctive shell-like shape and have a signature hump in the middle.
They are sweet, light and airy with slightly crispy edges. They are very delicious and easy to make. They are made in a special mould to get the perfect shell-like shape. You can enjoy these straight away after baking or you can make them fancy by coating them in chocolate. They require a few basic ingredients but it’s the technique that makes them succeed. They are most certainly one of our favourite desserts to bake! You can enjoy them with a cup of tea or coffee.

WHY YOU’LL LOVE THESE CHOCOLATE DIPPED ORANGE MADELEINES?

These chocolate dipped Orange Madeleines are the perfect little treat for your sweet cravings! They are full of orange flavour and have a very light and spongy texture. The edges are a little crisp to balance out the softness of these little cakes. The Madeleines are incredibly flavourful on their own but the dark chocolate along with some orange zest and chopped almond topping just takes them to the next level!
And if you are a fan of the orange chocolate combo then these madeleines are absolutely perfect for you! Every bite is full of flavour. And if you are not a huge fan of orange and chocolate then you can skip the dipping part. The orange madeleines on their own are enough to satisfy your sweet cravings.

INGREDIENTS FOR ORANGE MADELEINES 

  • All-purpose flour
  • Corn flour
  • Baking powder 
  • Eggs: should be at room temperature 
  • Unsalted butter (Melted)
  • Caster sugar
  • Zest of one orange
  • Orange juice
  • A pinch of orange colour(optional)
  • Dark chocolate 
  • Finely chopped almonds and orange zest for decoration 

HOW TO MAKE MADELEINES? 

Orange Madeleines are very easy to make. For this recipe, you will need a Madeleine mould. I used here a silicon one but you can use a metal one instead. This recipe is a tried and tested one so if you follow the recipe step by step, you’ll end up with the best madeleines. 

LET’S START STEP BY STEP!

Step 1: Melt the unsalted butter in a saucepan over low heat (don’t boil). Once melted, set aside. You will add to the batter later.

Step 2: Sift the flour, salt and baking powder then whisk together and set aside.

Step 3: Mix together one orange zest and caster sugar. Set aside.

Step 4: Add the eggs in a bowl, whisk the eggs with a hand whisk just for one minute, then add sugar + orange zest mixture and whisk together until well combined. Add vanilla extract, orange juice and mix it in.

Step 5: Fold in your dry ingredients into wet ingredients gently. Add a pinch of orange food colour but it’s totally optional. 

Step 6: Now carefully add the melted butter into your batter in two batches. Gently fold in after each addition until combined.

Step 7: Cover the bowl with plastic wrap and chill your batter in the fridge for one hour.

Step 8: Prepare your mould, melt 1-2 tsp of butter and lightly grease the mould. Place it in the fridge.

Step 9: Once there is about 1 hour, take your mould out of the fridge and fill 3/4 of each cavity of the mould with batter by using a spoon. Tap the pan to remove the air bubbles in the batter. Bake in the preheated fan oven at 170C/ 338F (for conventional oven 190C/ 374F) for 5 minutes then at 150C/302F in fan oven (for conventional oven 170C/338F) for 8-10 minutes or until edges become a bit golden and crisp, the signature hump has appeared and a toothpick inserted in the middle comes out clean. Rotate the pan halfway through baking. Let them cool slightly in the mould then transfer to a wire rack to cool completely. You can enjoy them straight away after baking with a cup of tea or coffee or make them a  little fancy with some chocolate coating. Baking time will be reduced if you are using a metal pan. Just bake for 10-12 minutes or until edges become a bit golden and crisp, signature hump has appeared and a toothpick inserted in the middle comes out clean.

RECIPE TIPS FOR PERFECT ORANGE MADELEINES

  • Measure your flour correctly. Use a digital scale to measure it but if you don’t have it, spoon and level your flour carefully. Spoon the flour into the measuring cup and then scrape a knife across the top of the measuring cup to level the flour.
  • Always use eggs at room temperature.
  • Don’t forget to use orange zest and orange juice. Acidity in orange juice gives a delicate, light and airy texture to the Madeleines.
  • If you are using a metal pan, grease the pan with melted butter. Although it is not necessary to grease the silicon mould but if you do so, it adds more softness to the madeleines.
  • Chill your mould before baking as that gives the madeleines their signature hump. It also prevents the Madeleines from burning edges especially when you are using a silicon mould. If your Madeleines still burn from the edges in your silicon mould, then use a baking mat under the silicon mould while baking. I used a baking mat. If you are using a non-stick metal pan then no need to use the baking mat under the pan while baking.
  • Chill your batter before baking as that gives the signature hump to the Madeleines.

  • Tap the pan on the counter before baking to remove air bubbles.
  • Only fill 3/4 of each cavity of mould otherwise it will spread out. The batter can be made one day in advance and kept in the fridge until you are ready to bake them.
  • Keep an eye as they bake. Every oven works differently so keep an eye on them.
  • Orange Madeleines are best served warm and eaten straight away after baking. But if you want to make them as fancy as I did, dip them in the hot chocolate, then sprinkle some orange zest & chopped almonds and chill for 5-10 minutes in the fridge and enjoy.

Ingredients
FOR ORANGE MADELEINES
  • About 3/4 cup (100 g) all-purpose flour
  • 1 tbsp (8g) corn flour/corn starch
  • 2 eggs, UK-Medium size (without shell = 100g), at room temperature
  • About 1/2 cup (100 g) Butter, melted
  • 3/4 tsp (3 g) Baking powder
  • Zest of one orange
  • 1 tbsp orange juice
  • 1/4 tsp vanilla extract
  • 1/2 cup (100 g) caster sugar.          
  • A pinch of orange food colour (optional)
FOR MADELEINES DECORATION 
  • 100g Dark chocolate (54%)
  • Orange zest and finely chopped almonds
Instructions
TO MAKE ORANGE MADELEINES 
  1. Melt the butter (don’t boil). Once melted, set aside.
  2. Sift all-purpose flour, corn starch and baking powder in a bowl and set aside.
  3. Mix together the zest of 1 orange and sugar.
  4. In a bowl, with a hand whisk, whisk the eggs (1 minute), add caster sugar + orange zest and mix well until well combined (about 1 minute). 
  5. Add vanilla extract, orange juice and mix it in.
  6. Gently mix the dry ingredients into the wet ingredients until just combined. Add a pinch of orange food colour (it’s totally optional)
  7. Now carefully add the melted butter in two batches and gently fold it into the batter.
  8. Cover the batter and refrigerate it for 1 hour.
  9. Lightly grease the pan with melted butter and place the silicon madeleine mould in the fridge. Chill your mould before baking as that gives the madeleines their signature hump. It also prevents the Madeleines from burning the edges especially when you are using a silicon mould. If your Madeleines still burn from the edges in your silicon mould, then use a baking mat under the silicon mould while baking. I used a baking mat. If you are using a non-stick metal pan then no need to use the baking mat under the pan while baking.
  10. Once there is about 1 hour, fill 3/4 of each cavity of mould with batter by using a spoon, tap the pan to remove air bubbles in the batter.

  12. Let madeleines cool slightly in the mould then transfer to a wire rack to cool completely.  
FOR MADELEINES DECORATION 
  1. Place the chopped chocolate in a heat proof bowl and melt in the microwave, in 10 seconds increments, stirring after each increment until completely melted and smooth.
  2. Dip each madeleine halfway into the melted chocolate then place them onto the baking mat.
  3. Sprinkle some orange zest and chopped almonds on the wet chocolate.
  4. Allow the chocolate to set in the fridge for 5-10 minutes before serving. Once set, serve and enjoy with a cup of hot coffee or tea.
NOTES
  1. Baking time will be reduced if you are using a metal pan. Just bake for 10-12 minutes or until edges become a bit golden and crisp, signature hump has appeared and a toothpick inserted in the middle comes out clean.
  2. These are best served within a day of baking. But, You can store leftover Madeleines in an airtight container, at room temperature for up to 2 days.
  3. If you want to keep them in the fridge, keep them in an airtight container and will be fine for up to 3-4 days.
  4. I don’t recommend freezing them because you will lose their texture and they will dry out very quickly.
